The Only Tortilla Soup Recipe You Need This Fall

Fall has officially entered the atmosphere, and we can’t help but embrace it. The leaves are changing, there’s a chill in the air, and our favorite cool weather accessory, soup, is making a massive comeback. Is there anything better than curling up on the couch with a hearty cup of soup? My favorite, you ask? Tortilla--all day.

Recently I have been graced with more free time than I know what to do with, so I jumped on the cooking train. I’ve started experimenting with old family recipes, and I must say, my Great Aunt’s Tortilla Soup is killer. I’ve been eating this soup ever since I was a child, and I may be biased, but it’s better than any other recipe I’ve tried at home or out at restaurants. This recipe will bring you warmth, and a ton of flavor, on the coldest of days.

Pro Tip: If you live alone, or it’s just you and your S/O, cut the recipe in half.

Ingredients:

  • 1 small can of green chilis 

  • 1 small onion chopped 

  • 1 large tomato chopped

  • 1 can beef broth 

  • 1 can chicken broth 

  • 1 ½ cup of water

  • 2 ½ cup V8 

  • 2 garlic cloves crushed

  • 1 tablespoon cumin 

  • 1 tablespoon chili powder 

  • 1 tablespoon salt 

  • 2 tablespoons Worcestershire sauce 

  • 4 skinless chicken breasts 

  • 16 oz of frozen corn 

  • 2 bunches of green onion

  • 2 cups grated cheddar cheese 

  • 2 cups sour cream 

  • Tortilla chips as needed

Preparation: 

  1. On the stovetop, lightly drizzle a medium-sized pan with olive oil. Once warm, place chicken breasts in the pan and cover with a lid. Flip chicken after 5 minutes. Cook for another 5 minutes.

  2. Remove chicken from the pan once there is no pink in the middle, transfer to a cutting board, and shred with a kitchen knife. 

  3. In a large pot, combine green chilis, onion, tomato, beef broth, chicken broth, water, V8, garlic, cumin, chili powder, salt, Worcestershire sauce, cooked chicken, and corn. 

  4. Bring to a boil. 

  5. Once ingredients come to a boil, reduce heat and simmer for 1 hour or more. 

  6. To serve, break down tortilla chips at the bottom of a bowl, add soup, a dollop of sour cream, and a sprinkle of green onion and cheese.
